Vinification: Skin maceration at low temperature, followed by controlled fermentation at about 12°/15°.
Aging: At the end of the fermentation, aging in barrique for about 3 months followed by aging in steel with batonnage and finally bottle for about 6 months.

Mefite Samnite is the goddess of water, found in San Pietro di Cantoni where the temple once stood. The beautiful goddess linked to the feminine and agro-pastoral sphere, to magic and healing, invoked for the fertility of the fields was the one who governed the phenomena of thermal, mineral and sulphurous waters.
